 Triple Filtered Carbonated Water- a fresh and clean canvasWe start with triple filtered carbonated water to insure the low mineral and salt content of SanTásti. This makes SanTásti unlike other sparkling waters which have a salty and sometimes sulfur taste that would negatively impact your tasting. We add an optimal amount of carbonation to provide a scrubbing sensation on the palate as well as making SanTásti more lively and pleasant to drink. SanTásti does work when it is flat, it just isn’t as lively. 
Pure Cane Sugar- just a touch!A small amount of cane sugar is added to balance the acidity, maintain a similar sugar level to wine, and is what makes up the 10 calories in a 12 ounce bottle of SanTásti. Another benefit from using such a small amount of sugar is SanTásti is not perceptibly sweet. 
Fruit Pectin + Cellulose GumThese ingredients function to mitigate the astringency on your palate. They bind to the tannins left in your mouth from wine, coffee, chocolate, tea, or other bitter and astringent foods. It is these tannins that would normally create the feeling of astringency. They also give SanTásti a unique mouthfeel that sets it apart from traditional sparkling beverages. 
Citric Acid- crisp acidityCitric Acid is used to increase the acidity of the beverage to make it similar to that of wine. SanTásti's acidity makes it safe to use as a rinse between tastes for your glass and your palate. You’ll no longer run into problems with the low acidity of regular water affecting the taste of your next wine. Citric acid also helps to mitigate dryness by stimulating saliva flow to help cleanse the palate of residual flavors.
